Among the many kolagach (banana plant) products Bengalis have thought to turn into delectable food items, kachkola’r kofta (raw banana kofta) remains an eternal favourite. Kanchkola’r kofta are delicately spiced, deep-fried raw banana fritters. Boiled kachkola are mashed with boiled potatoes, onion paste, ginger, green chillies, and a host of dry spices including bhaja masala, which gives the koftas their distinctive flavour. A little maida (all-purpose flour) binds everything together. This mixture is then portioned, shaped into discs, and dropped in hot oil. We like to fry our kachkola’r boras until they are dark brown in colour (as opposed to golden brown). This leads to richer, better tasting koftas, which also don’t break as easily once introduced to the curry. This brings us to the second part of the recipe—the kachkola jhol/dalna. This raw banana or plantain curry is hot, gingery, and slightly sweet. The addition of grated coconut gives the curry body in addition to a nice texture. These green banana koftas, once fried and completely cooled, freeze very well. We usually make a large batch and freeze half for up to 30 days. Be sure to store them in an airtight box or bag. The day before you want to make the curry, move them from the freezer to the fridge and let them defrost slowly. Oh, and also do not discard the green banana peels while making this kachkola recipe, as you could turn them into a delicious, fiery khosha chachchari. Raw banana, tempered with spices and cooked with Spinach. RAW BANANA WITH GREENS Ingredients 2 raw bananas, boiled with skin 25-30 fresh spinach leaves 1 small bunch fresh green amaranth (chavli) 2 tbsps oil ½ tsp split skinless black gram (dhuli urad dal) ½ tsp mustard seeds 2 dried red chillies, broken 15-20 curry leaves ¼ tsp asafoetida Salt to taste 3 tbsps scraped fresh coconut 2 green chillies 1 inch ginger 3-4 garlic cloves 1 tbsp roasted chana dal A pinch of turmeric powder 1 inch ginger, cut into thin strips Method 1. Heat oil in a pan, add split black gram, mustard seeds, broken red chillies, curry leaves and asafoetida and saute till the seeds splutter. 2. Add spinach, amaranth and salt and mix. Add ¼ cup water and mix. Cover and cook. 3. Grind together coconut, green chillies, ginger, garlic, roasted chana with little water. 4. Peel the bananas, slice into round pieces and add to the pan. Add a pinch of turmeric powder and mix. 5. Add the ground paste and mix. Cover and cook for 4-5 minutes. 6. Transfer into a serving dish and serve hot garnished with ginger strips. Ingredients Raw banana – 3 nos Onion – 2 nos Grated coconut – 1 cup Curry leaves – 3 sprigs Dry red chilli – 3 nos Coriander seed – 1 tbsp Fennel seed – 1 tbsp Urad dal – 1 tsp Cumin seed – 1 tsp Mustard seed – 1 tsp Salt – 1 or 2 tsp Oil – 3 or 4 tsp Method Firstly ,cut the raw bananas into equal half and set aside. Take a pan add water and raw banana cook them well and set aside . Heat oil in a pan add urad dal,dry red chilli ,coriander seed and fennel seed saute them well. Add grated coconut and roasted them well and set aside. Now peel the cooked banana and smash with a neat spachilla and set aside. Crush the roasted red chilli, grated coconut and other ingredients into fine paste and set aside, Heat oil in a pan add mustard seed and cumin seed ,lets crackled. Add dry red chilli,curry leaves and chopped onion saute them well. Then add smashed raw banana plantain and grinded coconut masala mix them well. Add some salt and cook them well. Green Banana Kofta Curry , Kachke Kele Ke Kofte, Kela Ka Kofta, केला कोफ्ता करी Ingredients for Raw Banana Kofta Curry Raw banana - 5 (400 gms) Tomato - 2 (200 gms) Green chillies - 2 Ginger - 1-inch baton Peanuts - 2 tbsp Ginger - ½ inch piece Chickpea flour - 2 tbsp Turmeric Powder - ¼ tsp Coriander Powder - 1 Tsp Red chilli powder - ¾ tsp Green chilli - 2 (finely chopped) Dry fenugreek leaves - 1 tsp Garam masala - ½ tsp Salt - 1.25 tsp (or to taste) How to make the raw banana kofta curry: 1- Wash and dry the raw bananas. 2- Cut and remove the stalk of banana from both the sides. Cut the thick pieces of the banana. 3- Boil the pieces in the pressure cooker with the 1 cup of water. 4- Turn the flame to low after the first whistle and cook the bananas for 2 minutes. 5- Switch off the flame after the 2 minutes and open the lid when the pressure of the cooker has released. 6- Strain bananas out of the water using the strainer. 7- Peel the boiled bananas 8- Mash the peeled bananas. 9- Add the chickpea flour, ½ tsp of salt, red chilli powder, ½ tsp paste of ginger, finely chopped green chillies, garam masala less than the ¼ of tsp and finely chopped green coriander in the mashed bananas and mix them properly. 10- Preheat oil in the wok 11- Take some portion of the mixture and roll it to make the round ball out of it 12- Make balls of the whole mixture using the same procedure. 13- Add all the balls in the wok to fry. 14- Stir, flip and fry the balls until they are golden brown in colour. 15- Take out the fried balls in the plate. 16- Prepare a paste of the peanuts, tomatoes, ginger and green chilli. 17- Add the prepared paste and red chilli powder in the roasted spices 18- Stir and roast them until the oil separates from the masala mixture. 19- Add and mix the 1.5 cups of water, salt, garam masala, chopped green coriander. 20- Add the fried balls in the gravy once it has boiled. 21- Cook the gravy for 2 minutes on the low flame. 22- Switch off the flame and take out the curry in a bowl. Serving: 1- Garnish the curry with chopped green coriander and serve it with chappatis, paranthas. Banana Fry Recipe, jain raw banana sabzi,green banana Curry,raw banana stir fry recipe, Ingredient : Raw Banana (कच्चे केले ) - 3 ( 500 gms ) Oil (तेल ) - 2 to 3 tbsp Green Coriander (हरा धनिया ) - 2 to 3 tbsp ( finely chopped) Cumin (जीरा ) - 1/4 tsp Black Mustard Seeds (राई ) - 1/4 tsp Curry Leaves (करी पत्ते ) - 10 to 12 Asafoetida (हींगे ) - 1/2 pinch Turmeric powder (हल्दी पाउडर) - 1/2 tsp Red chili powder (लाल मिर्च पाउडर ) - 1/4 tsp Mango Powder (आमचूर ) - 1/4 tsp Coriander powder (धनिया पाउडर ) - 1 tsp Ginger paste (अदरक पेस्ट ) - 1/2 tsp Green Chili (हरी मिर्च ) - 2 ( finely chopped ) Salt (नमक ) - More than 1 tsp or to taste How To make Raw Banana Sabzi : 1. Take Green Bananas, remove the stalk from both ends. Remove the thick green peel. Cut it into pieces. 2. Put the pieces into water to prevent it from turning black. 3. To boil the bananas, Turn on flame. Heat water in a vessel, Add salt, turmeric powder. Mix it well. Cook until the bananas are soft.Check at regular intervals. 4. After 10 minutes, once they are boiled, turn off flame, Strain out the bananas from the water. 5. Heat a pan for making the sabzi. Add oil to it. Add black mustard seeds, cumin seeds. Reduce flame to prevent spices from browning. 6. Add curry leaves and asafoetida, finely chopped green chili, ginger paste. Slightly roast the spices. Add turmeric powder,coriander powder, slightly roast these. Now add the bananas.Put flame to medium. Add salt. 7. Add red chili powder. Add Mango powder, some finely chopped green coriander. Stir continuously and cook for 2 to 3 minutes. Turn off flame and take it out in a bowl. Serving : 8. Raw banana Dry Sabzi is ready to be relished. You can serve it with chapati , paratha , poori. RAW BANANA BHAJIYA Ingredients 200 grams raw banana (kaccha kela) ½ tsp carom seeds (ajwain) ½ tsp cumin seeds 1 tsp coriander seeds 1½ cups gram flour (besan) Salt to taste ¼ tsp turmeric powder ¼ tsp red chilli powder Oil for deep frying Chutney ¼ cup scraped fresh coconut 1 green chilli ½ inch ginger ½ lemon ¼ cup fresh coriander leaves Salt to taste Method 1. Peel and diagonally slice the raw bananas and keep them soaked in a bowl of water to prevent discolouration. 2. Dry roast carom seeds, cumin seeds, and coriander seeds till fragrant in a non-stick pan. Allow the roasted spices to cool slightly, transfer this into a mortar pestle and coarsely pound it. 3. To make the batter, take gram flour in a large bowl, add salt, turmeric powder, red chilli powder and 1½ tsps ground mixture. Add ¾ cup water and whisk to form a smooth batter of coating consistency. 4. Heat sufficient oil in a kadai, dip and coat each raw banana slice with the batter and gently slide into the hot oil. Deep fry till golden and crisp. Drain on an absorbent paper. 5. To make the chutney, put coconut in a blender jar, add green chilli, ginger, squeeze the juice of lemon, coriander leaves, ¼ cup water and salt and blend to a fine paste. 6. Vazhakkai Podimas is one of the traditional Poriyal variety in Tamilnadu. With the flavor of Ginger, Green Chili, Coconut, this is one of the scrumptious accompaniment for any South Indian Main Course. Detailed Recipe with step by step pictures - 🤍 INGREDIENTS 3 Raw Banana ( If big, we can take 2 2 tbsp Grated Coconut 1 tbsp Grated Ginger 1 tsp Salt Adjust As Needed FOR TEMPERING 1 tbsp Coconut Oil 1 tsp Mustard Seeds 1 tbsp Split Urad Dal 2 Green Chili Chopped Few Curry leaves INSTRUCTIONS COOKING RAW BANANA Wash the Raw Banana and discard the top and bottom. If the raw banana is big, then cut into 2-3 big chunks. Add 2 cups of water in a kadai/pan. Bring the water to rolling boil. Add the Raw banana into the boiling water. Cook the raw banana for 4-5 mins. Using a spatula, flip it so that the raw banana gets cooked on all sides equally. When skin of the raw banana becomes black on all sides, insert a spoon or fork to check if it goes inside without putting pressure. If you try to peel the skin, it should come off easily, that is the right consistency. Now, take out the cooked Raw banana from the boiling water. Allow the cooked raw banana to cool off. Then peel the skin off the cooked raw banana. Using a carrot grater, grate the cooked and peeled raw banana. Once the grated raw banana is ready, add grated coconut, ginger and salt. Give a gently mix with a spoon so that we are not mushing the cooked raw banana. TEMPERING Heat oil in a pan. Add mustard seeds and allow it to sputter. Then add split urad dal to the pan. Give a good mix. The urad dal becomes light brown color. Then, add the chopped green chili and curry leaves and give a mix. FINISHING PODIMAS To this tempering, add the mixed grated vazhakkai podimas along with ginger, coconut and salt to the pan. Gently mix so that raw banana gets nicely mixed with tempering. SERVING TIME! Delicious Vazhakkai Podimas is now ready. Relish with Sambar, Rasam or Kuzhambu rice!
